Okay, here's the deal. The iPod cannot play all the music formats that iTunes can play, seems stupid but that's the case. For the songs that don't copy over, select the song in iTunes, choose "Get Info" from the File menu, and check the format of the song. Just because there is an mp3 extension on the file doesn't always mean it's an mp3 file. In some cases it can be an mp2 file or an mp1 file, which the iPod cannot play. Also check to see if the compression rate is higher than 320kbps. If it's a wav file, iPods only can play uncompressed wavs.

Select all the songs you wish to rename at the same time. Not sure of the Windows key combos, but on the mac, I select the first song, the hold the shift key and go to the last song and select that, and everything in between gets highlighted as well. Probably the same for windows. Then select "Get Info" and you'll be able to change all ID3 tag info (except song name, of course) at the same time. :)
