Vicman's Raspberry Meringue Gateau

OK, sorry for taking a bit to post this up, but I kept forgetting the damn recepie at home and I was to lazy to write it up once I got back after werk, but here it is:

Raspberry Meringue Gateau

Butter or margarine for greasing

4 large egg whites

I cup regular sugar

1 tsp Vanilla extract

1 tsp distilled vinegar

1 cup roasted hazelnuts, ground

500g raspberries (frozen or fresh but fresh work better)

3-4 tbsp caster or confectioners (icing) sugar-for raspberry SAUCE

3 tbsp caster or confectioners (icing) sugar- for raspberry CREAM

1 tbsp orange liqueur (or 1/3 cup orange juice if you cant/don’t drink alcohol)

1 ½ cups double cream (or whipping cream or heavy cream)

confectioners (icing) sugar for dusting

raspberries, ground hazelnuts and mint springs to decorate

1. Preheat oven to 350. Grease two 8 inch cooking pans and line the base with wax paper.

2. Whisk egg whites in large bowl until they hold stiff peaks, then gradually whisk in the 1 cup of regular sugar, continue whisking after each addition of sugar until very stiff. Fold in vanilla essence, vinegar and hazelnuts.

3. Divide meringue mixture between the 2 pans and spread it level. Bake for 50-60 minutes, until the meringue rounds are crisp. Remove the meringue from the pans and let them to cool.

4. Meanwhile make the rasperry sauce. Puree 225 g (8oz) of the raspberries with the confectioners (icing) sugar and orange liqueur (or OJ) in a blender or food processor, then press the sauce through a seive to remove any pits from the raspberries. Put in fridge until serving time.

5. Whip cream until it forms soft peaks add 3 tbs of confectioners (icing) sugar, the fold remaining raspberries. Break a few raspberries to give the cream a red color.

6. Sandwich the meringue rounds together with the raspberry cream.

7. Dust the top with icing sugar, decorate with rasperries, ground hazelnuts and mint springs.

can you say devil's food? :eek: no kidding ya'll that dessert was fawkin awesome. take my advice, make yourselves some. or just call vic, i'm sure he'll be more than glad to cook for us. :rolleyes::D
