That's great news!! I love pizza and I've been doing a lot of research on organic foods. Trying to clean up my diet. I've moved to the Pompano Beach area now so you'll definitely be seeing me sometime soon. 8)

P.S. Will you guys be offering whole wheat crusts?

Natural foods is the way to go. I starting eating mainly natural foods about 2 years ago and I've been a vegetarian for over a year. I feel better now than I've ever felt in any point in my life. I haven't had a stomach ache in 2 years.. :P

Congratulations on the new Joint.

There is a Pizza Place that opened by my job here in Boca Raton by the name of Peace Pizza which serves pizza of different toppings even vegetarian pizza's. Its a great idea to go with the orgaic route' date=' I can imagine a lot of success.

WOW... Been making Pizza ALLLLLL day! LOL! We love all of you and can't thank you enough for your kind words! It's been a long-time coming and a lot of hard work as some of you mentioned. Nicole and myself hope u can swing by anytime!

And to answer a few questions...

YES... we offer a Multi-Grain dough and I know it's biased' date=' but it's the BEST I've ever had... we did our homework!

We also offer a GLUTEN FREE dough which is for people that suffer from Celiac Disease!

We offer Soy Cheese, but I personally don't like so we use an all-natural option... but DO offer Soy cheese.

Be on the look-out for a coupel of GREAT articles about the concept in Whole Foods' NATIONAL Magazine as well as USA TODAY! WOOT!

Again... YOu guys made our day! Had "something in my eye"!

is this by any chance a franchise of the girl that opened in NY and was featured on TV i think opening soon or something like that?

Nonetheless I really loved her story and think it's a great investment.

I have a couple questions for the head pizza chef :)

As I'm certain you know, wheat flour is the only type of flour that contains the two proteins that form gluten when water is added and the dough is worked. Gluten is what gives the dough its plasticity and elasticity. The key to creating the perfect pizza dough is to be sure the dough has been kneaded enough to form a perfect balance between the proteins.

I like a pizza dough that is just ever so crispy, but also chewy at the same time. What sort of kneeding times do you use or recommend to your subordinate pizza chefs? And what are your oven temperatures? High heat is required to achieve the crispyness I desire. Do you add olive oil to your crusts? The addition of olive oil really adds to the tenderness. I have found that a first cold press, Spanish olive oil can be a very nice addition to a pizza crust.

Lastly, I have found that nothing adds that ever so delicious stringy cheese texture as adding some provolone cheese to a pizza. This is a technique commonly found in pizzerias throughout the midwestern states of the United States. Is provolone an option on your pizzas?
