So, who on the board likes to cook?

and what are your signature dishes?

I personally LOVE to cook. And I'm not talking about boiling some pasta and nuking some Ragu :rolleyes:

A few of my specialties are:

antipasto including: Eggplant Caponata, Olive tapendade, various kinds of pestso, and roasted garlic spread with crostini, roasted peppers, marinated mushrooms and artichoke hearts.

Pasta Puttanesca

stuffed artichokes

stuffed squash

black bean and vegetable chili

Spicy Thai cucumber salad

etc. etc.

(can you tell I'm a vegetarian)

(lets go BarVybe, I know youre alllll over this one)

It was just innocent flirting with the dark side.

You know, this one girl at an ad agency once told me she got stuck somewhere with her friend, so they pulled out a liq and cooked k on the engine (on top of foil)...

Is that nuts? lol

Thought I'd share it, I stared at her like she had 3 heads at that point... and yes, it was during drink after a business meeting 2 years ago! lol

Spicy Thai cucumber salad:

Its Very simple:

Mix 1/3 cup white vinegar, 1/4 cup sugar, 1 teaspoon ( or more if you like it hotter) red pepper flakes in a bowl until the sugar dissolves.

peel 2-3 large cucumbers, slice in half, seed, and cut into half moons, actually I like to get the seedless kind, its less messy.

corsely chop about a 1/4-1/3 cup red onion

finely chop 2-3 tablespoons fresh mint and 2-3 tablespoons fresh cilantro

mix it all together and chill for an hour.

Then add a 1/3 cup coarsley chopped peanuts, chill for another hour and serve.

I like to cook now and then...

For breafest we have Rocky Mountain Toast

1 frying pan

1 egg

1 slice o' cheese

1 slice o' bread

heat pan

butter pan

bread pan

make a hole in the center of the bread

break the egg in the bread hole sunny side

let it cook a little

(sometimes i sprikle a lil cinnamon..on the egg)

flip it

drop the cheese slice on top....let it melt

done!

For lunch we have...peanut butter and fluff sandwhiches!

bread (duh)

peanut butter (im a crunchy fan)

can o' marshmello fluff (pathmark should have it)

apply extravagantly....eat! num num

For Dinner we have....Stuffed Peppers...ooooh

whole green peppers

pound o chop meat

block of mozz cheese

sauce (my recipe is a secret) shhh dont tell

2 bags of white rice (goya oh boya)

first we make the stuffing...

make the sauce

boil the rice

put the rice in the sauce

put the beef in the sauce

put the cheese in the sauce(chop it up in chunks..watch those fingers!)

get a pan the fits the peppers

cut the tops off and dig the insides out

put a little veggie oil on the bottom on the pan

place the pepper shells in

cover them with the stuffing

bake 350ish for about 45 min or so....depending how hungry you are..heh....enjoy!

for dessert?

find a can of whipcream....drop your pants around your ankels

and chase your boyfriend or girlfriend around the house in the funky penguin two-step.

Seafood…all types….

Anything with BASIL (almost went with the DJ name “Chuck Basil”)

Different variations of pastas w/veggies/chicken/etc….

Of course BBQ’s….

Homeade wraps…of all types

I’m not big on recipes….just kinda go with the flow….

this one is REALLY good- its a Golden Gazpacho - you use yellow tomatoes and yellow pepper, fennel, adn a bunch of yummy things- dont have it on me-I'll put it up later when I am home-

spicy Thai Cuc is defintiely on my next experiment!

:flame::flame:........Cookin up a storm rite now in my kitchien, somethin lite though: Chick peas sauteed in olive oil with tomatoes, garlic and onions, and a dash of soy sauce; along with caesar side salad with red wine vinagerette dressing.....and a cup o tea:D

DANA'S GOLDEN GAZPACHO

2euro cuks(one if they are large)

2 yellow tomatoes

1/2c. of shallots

1T. garlic

2T. fresh basil

2T. fresh cilantro

1/2c.scallions

1C. celery hearts

1qt.veg. broth(just to thin)

1bulb fresh fennel

2yellow peppers

S/P to taste- dash of cayenne

saute shallots, peppers, fennel, and garlic in olive oil

combine veggies and puree slightly

thin w/ broth as needed

stand overnight - chill

and a good salad- Asian Sesame Chicken Salad

Romaine

grilled chicken

cilantro

sesame vinegarette

almond slices

serve w/ sourdough roll

ohhh this thread is making me hungry... lavendermenace, that thai cucumber salad sounds delish, gonna try that...

i LOVE to cook... it's a family pastime so it was inevitable that i'd end up like the rest of them... lol.. and sadly, i've become addicted to the food network too... i know every show and chef on there...

my thing is salads. i'm always throwing together something different... my fave for the summer was a potato salad with fresh basil and red onions.. mmm i threw in some lemon juice too... so yummy. i have an obsession with fresh basil. i make a meeeean pesto sause... dammit im really hungry now! :mad:

i can't wait for cold weather cooking... thanksgiving.. woohoo

hahahha! well, i can vouch for the yumminess of Lav's recipes...her antipasto kicks ass!!! she's especially good at cooking while drinking wine :)

that gaspacho recipe looks great! I have a really good one with red tomatos somewhere.

so does the potato salad with basil in it :)

Lav, what are my sig dishes? i'm not sure...

I can bake ANYTHING!!!

For summer i've been making stuff like:

- roasted corn guacamole

- oven dried tomato and smoked mozzarella pasta salad

- cold thai peanut noodles

- noodle pancakes with garden vegetables and stuff

- southwestern eggs with whatevers on hand

- all sorts of marinades and stuff for the BBQ (a dill and cilantro vodka one for salmon was yummy!)

- tomato basil pasta sauce (requires no cooking)

I make crazy good lazagnas - both red (with all sorts of stuff in it) and a green basil / spinach one

i'm all over chinese food

ack! all kinds of stuff

i'd be happy to post recipes if anyone wants...
